How to make Sausage Pie
A crispy puff pastry topped pie containing flavoursome leeks and sausages
- 4 Sausages
- 4 Leeks
- 1 Medium Onion
- 2 garlic cloves
- Litre Chicken Stock
- Packet Puff Pastry
How to prepare
Fry off the sausages until they are browned. Finely slice the leeks, onion and garlic. Roll out the pastry to cover a deep pie dish.
In the frying pan place leeks, onion and garlic and cook till softened. About 10-15 minutes.
Cut the sausages into bite size pieces.
Place the sausages, leeks, onion and garlic in the pie dish.
Cover with the Chicken Stock.
Place in the oven for 45 minutes at Gas Mark 5/175°F/80°C.
Cover with the puff pastry, brush with milk and place back in the oven for a further 20 minutes until the pastry has cooked.
For extra flaky pastry roll the pastry out till thin then fold in half and repeat this six or seven times.
Serve with any vegetables you like, roasted carrots and fennel go nicely.
